This wine has been made by a natural ‘wild yeast’ ferment, where the juice is encouraged to ferment with the natural yeast present on the grape skins from the Adelaide Plains vineyard. The yeasts indigenous to a particular area are an important part of what gives its wines their character. This technique builds a wine with complexity and finesse and true varietal character.
This organic Sauvignon Blanc has a lifted bouquet of lemon, lime and citrus. These flavours are followed on the palate resulting in a crisp, refreshing wine, with zesty acidity. Best served chilled.

The 2015/2016 growing season was exceptional. The region experienced above average temperatures throughout the year and rainfall was persistently low throughout winter. The warm temperatures led to an early harvest with vintage starting approximately 3 weeks earlier than the previous year. Yields of most varieties were above expectations with above average fruit quality. Lovely, fresh, varietal fruit flavours are abundant in our wines.
The vineyards are certified with Australian Organic.
Best served chilled. This wine lends itself perfectly to grilled seafood, spicy Thai cuisine and fresh salads.
